Serradinha - Lisbon, Portugal

Varietals: Baga 65% / Fernao Pires 15% 

Originally planted in 1952, by Antonio's grandfather, Serradinha (little mountain) was the first viticulture estate to be certified organic in 1994. The ladybug on top each bottle represents the actual event happening to Antonio's father right before passing the winery to Antonio, a ladybug landed on a bottle he was about to open. 

The grapes are destemmed and foot-trodden before fermented in used barrels with native yeast and a 10 day maceration.  The wine is aged on it's lees for 2 years.  

The wine is beautiful and complex, with violets, wild berries, asphault and wet oak leaves on the nose, the tannins have aged and intergrated throughout the palate providing a savory back drop of a delicate balsamic. 

Thinly sliced lamb loin, lightly seared rare - rare/medium rare. Drizzled with an herb and berry reduction over red cabbage flamande and cauliflower whipped potatoes.
